hill, then it reads OK when you are on flat ground. This is an indication that your coolant level is too low - but it may not be critical. As for adding water, yes you can, but remember the optimal mix is 60% coolant/40% water IIRC, so don't dilute it too much over time.
BTW, if you need to purchase coolant, I've found it a couple of dollars cheaper at VW dealers than at my Audi dealer. It is around $18 a gallon.

I had my light come on and off a few times. Then it came on solid. Turns out my waterpump was shot and had to be replaced under warranty as it was leaking out the weep hole. I too just filled it with water once to get it back up to level. Didn't require too much so I just shrugged it off. Better safe than stranded when the pump seizes up, throws the belt into the fan and causes much more in damages.... :-) Well maybe not that bad, but you get the idea.
