Well, so far so good. I sealed it up with a new gasket and lots of RTV on the corners, and waited a little more than 24 hours. No leaks so far, although it didn't leak immediately the last time either. So I'll be holding my breath for a while...

What kind of RTV are you using? I've had good luck with The Right Stuff on engine oil pans. Worst problem with this stuff is you have to put the parts together within about 5 minutes so if you're really slow on dispensing the stuff (it's an aerosol-like can with a trigger) it might get too hard on you. Supposedly it's good to go immediately, but I usually wait overnight. Good to 450F continuous, 500F intermittent.

Meets GM 998-5990
Ford WSE-M4 G 323-A6
Chrysler GF-44-A

OTOH, Loctite 5920 is supposed to be ok on applications up to 350C but the technical data sheet doesn't support that IMHO:

http://tds.loctite.com/tds5/docs/5920-EN.PDF

I looked at the tds' for a few Loctite products and The Right Stuff...other than the high temp they all seem pretty close, varying cure times.

Audi also has a specified valve/cam cover material sold by ECS...D154103A1. 100gm (~3oz) for $95!!!

Not sure what brand it was. I threw out the tube after I finished this job because it was empty.

I just had the same problem. Can't recall how long I waited, but it was probably at least overnight. I used Loctite black RTV.

Can PCV also cause this? How do you check? It's not the suction jet--my 2001 2.7 Tip doesn't appear to have a suction jet or an F-hose.

Actually funny you should mention that because although my pcv pipes were ok (I changed them about a year ago) the pcv outlet from the valve cover was quite clogged on my car. I cleared that out when I put the new gasket in a few days ago, so maybe that was what really did it, more than the new gasket. Either way the valve cover really had to come off to clean that outlet properly.

2 days now and so far not a hint of burning oil

I think you got it now. I tired replacing the whole PCV system of corrugated tubing and it wasn't the problem. VCGs with a good 24 hour cure on the RTV seems to be the best route.
