oil wont heat up.. 2.7T

for the past few weeks or so I've been noticing that my engine oil temp wont go past the first line (175 if accurate) even after 20+ min's of combined stop and go and highway driving. I know its been colder lately but I consider it a bit strange to never see it even fully reach that first line on the gauge.
Oil just changed with 0W40 Mobil 1 (as always) last week, no strange sounds or anything unusual. It's been running smooth, if down a bit on power lately (according to the butt dyno). I had an issue prior to the oil change that felt like the car was not producing boost, like a stuck open wastegate or something, but it disappeared on its own.
Any thoughts?

If so, then it's likely the oil temp sender has gone south. Mine has, but it goes all over the place...often lingering at or about the min.

coolant comes up to temp... maybe takes longer than I'd like it to now that its cold out, but its about normal. My wife's van is blowing hot air in about 2 min's- this car has always taken a fair amount longer. Thank God for seat heaters!

conditions. You could try putting a 12" x 12" piece of cardboard between the A/C condenser and the radiator, but don't block it off totally. If your t-stat was bad, the coolant temp would oscillate or never get up to full temp (12:00 position).
