to "fill the wheelwell better" you would do better to lower the car another 1/2" rather than increase the tire size. This also reduces you clearance issues. Which in turn allows you to get back to a near-stock offset and suspension geometry. target 30-40mm. Since oyu want wheel clearance, closer to 35-30 likely. 15 is a bit much.

Right, update..

They have an ET of 45mm (my bad), less the 20mm spacers which leaves me with an ET of 25mm which I would gather is more acceptable..?
I think I'll leave the tyres on for the time being and see how they fare as winter closes in here and then I'll probably try 255/40/18s.
I will look into lowering the car slightly which I guess I could achieve with just springs, any suggestions on make?

Hmm, wheels are 8" but fitted with 255/35/18 tyres, that's what made me think they were 9s.. They measure 230mm overall from outside of lip to lip which seems too much for an 8" wheel even taking off the width of the lip either side..
Strangely the tyres appear to fit really well although according to the charts, the minimum width wheel for that size tyre is 8.5" but it's definitely stamped 8J x 18". They sit square to the rims and project ~10mm either side.
Even stranger, the space by the ET marking is blank which leaves me in the dark somewhat.. They aren't genuine VW wheels so I guess they are probably those two posts back.
Conclusion is that I am on the hunt for a set of genuine Audi 18s with an ET of 35mm but will live with these for the time being..
I had the car inspected by an Audi garage yesterday, a few historic fault codes mainly relating to me taking the instrument panel out to replace the central lcd panel plus one of the rear seat belt pre-tensioners is dodgy and the passenger's door dead bolt not working although the lock is... Mechanically, one sticky caliper, bit of oil residue around the rear gearbox oil seal, both CV boots starting to go and an incorrect exhaust mount somewhere so pretty happy overall.

I believe to get the granularity of ride height you want, and to match springs to dampers, which is very important for overall ride and handling, you should consider a spring/strut/damper set with adjustable spring perches. These are often, confusingly, called "coilovers" despite the fact that most everything is a coil over damper anyway.
This way you can literally dial it up and down, rather than guess, and then hope the unmatched, un-engineered set rides and handles well, which it typically won't.
25mm is better than 15, just as terminally ill is better than dead.

Bit the bullet.. 19" ET35 RS6 replicas with Kumho KU39 255/35s...
The ride has been transformed, more direct feel steering, lost the jitters, very happy. The look of the car has been transformed imo too. No clearance issues at all.
