Well that's true, I was just trying to be funny. =) My corrado ran really hot, thought it never...
really overheated.. but when it did, it did a great sugar house impression.

Yeah, the spring would kind of prevent that I'd think..
I've had them get 'weak' where they opened too early and stayed open too long, but never had one stick open. The thermostat I just changed in my A6 was like that, the car would take for ever to come up to temp, and would cool off going down long hills in the winter, but it was not 'stuck open'.. In fact, it still had plenty of spring resistance..

Dunno about the C5, but I had two stick open on my older Audis...
They'd take awhile to warm up in cool weather and the temps would drop when cruising, then climb back to normal when in traffic.

I wouldn't say it consistantly falls whilst driving.
Somedays it appears to work normally. Then it can fall away to zero, be it in traffic or whilst cruising, then slowly comes back up to almost 90 deg.
One thing I'd say that is consistent, is that it always tends to sit below the 90 deg, where it used to always be rock solid at 90.
