Trying to find out if 225/50/16 snows will fit on my 2000 A-6 2.7T. Right now I have the stock 215/55/16 on original wheels. Tire Rack says they will fit on the rim but they won't go further. I've got 4 almost brand new Hancook i-pikes off of a '94 S4 that is no longer on the road. Like to use them in Vermont this winter.

They might fit fine but they won't be as effective in deep snow as 215/55-16 tires or even better 205/60-16 tires. For snow, taller and thinner is better. But who knows...Vermont might have a warm winter.
The larger issue is those 225/50 series sidewalls are ~112.5 mm high while the 55s are 118.25mm or roughly 6mm shorter even with the wider section. Just be aware of the potential for wheel damage although the 16" wheels seem to be very stout, at least compared with 17 or 18 inch rims.
The 255/40-17 tires that were optional on the 2K4.2A6 are even worse at 102mm sidewall and those definitely aren't good on potholes and bent rims.

At an indicated 60mph, assuming your OEM speedometer is accurate, your actual speed will be ~59mph.
Since your OEM speedometer probably reads high to begin with, you'll be going even slower than you were before.
That being said, the smaller overall tire diameter should lead to a negligible increase in acceleration, probably negligible change in mileage, and a change in gappage (more).
