Default are these good for winter season tires...? it doesn't snow that much here in NJ..

I drove on them all winter here in the Boston area and they provided good traction on snow and ice.

if you can bump these up to 225x55 on the stock 16'' 5 spoke rims? If so, any problems/concerns associated with do this?

Default Sure, you can do that...
...you speedometer will be slow by 1.7% (which is to say, it will probably be closer to accurate than now).
