Update:
finally was able to figure out the jack stands and how to use them in conjunction with the jack - I *think* I used the lower control arm area (see my other post - how to use jack stands) and placed the jack stand under the pinch weld.
It was really hard to figure which which are the two slider bolts - but after taking a couple of pics I think I figured it out. Can someone confirm that those are the two things that need to be removed? The platic caps came off - but then I tried those Hex keys - 7mm was too small, so I went to the next bigger size which was the biggest in my set. It seemed to fit - but that thing didn't budge. Then used another screw thingie with a socket adapter .... but then the screw thingie got stuck. After a lot of struggling with pliers, it came off. It got dark, so we called it a day. Can someone tell me what do I need to remove those two things on top of the caliper? pic of the tool would be awesome!!!

Yes that is the retaining spring. But the sliders are a little more central, and most have a little cap covering the head. Besides the things you were pointing to are star heads. Just turn the wheel so you can see more of the rear of the caliper and you'll see what I'm talking about.
Also set the parking brake at the very least. But yeah the jackstands and wheel chocks are the best way to do this.

Ok, I found the bit that we need for this. I didn't even know something like this existed. Will try once more now that I think I have everything required for the brake job!!

Why is VAGCOM needed for the rear?
I've got the piston windback tool used on the rear of VWs. Is that what's needed?

I was finally able to do my front brakes- thanks to everyone for their help.
This DIY has our exact same Caliper: https://www.audiworld.com/tech/wheel137.shtml
To remove the caliper out of the Caliper bracket, I had to use a screw driver to wiggle/pry it out of the bracket. I don't think pulling it straight out would have worked since the caliper is wrapped around the bracket.
I was able to remove the two bolts (21mm) holding the caliper bracket on the driver side (I stepped on it forcing it to unscrew), but the passenger side wouldn't budge. Did the brake pads for both wheels and took it to shop to unscrew the bolts and install new rotor. Also had the mechanic inspect my job (he gave me a thumbs up). The screw holding the caliper bracket was tighened to 70 lb-ft. He said that that is what is required and he always uses that setting for all cars (and there is no reason why it should be any different for Audi). My Bentley guide reached (home) today so I will check it for the torque setting once I get home.
If anyone has any questions on front brakes replacement - PM me.
Ordered the rear brake pads today...
