So I used to have a Samsung Note 4 and I synced it with my 2016 A7. I had options to choose from a few notifications about incoming calls. Bells, whistles even a "voice" saying I have an incoming call. All good.
Then I upgraded my phone to the Samsung Note 8 and I no longer get that option . The phone still rings and the car pipes in the phone ringtone through the speakers.
I no longer get the option to choose an Audi provided notification to use, which I think it's weird because I upgraded the phone and now i don't see it.

I had the same issue...and I thought I went crazy since the there was an option to change the incoming phone ringer tone thru MMI option and now I can't find it.

I also used the "Voice" as the ring tone, but now the phone just use the ringer I chose on the phone.

It all happened after there was an update to my Galaxy S6 thru Sprint, so I think its the Android phone issue.

The Samsung Note 8 like the iPhone supports what's called Bluetooth In-Band Ringtones. Google finally added support in Android 8 for it. iOS has had it for a long time. Instead of the hands-free device like the MMI generating a ringtone, the ringtone comes from the phone itself as you noticed. Since the MMI no longer has to produce the ringtone when a call comes in, it obviously won't let you select one anymore.
