After changing all the same components as you did, my A8 still was running a bit high. Eventually I found (through Bentley) that there is a bleeding proceedure to remove the air from the pressurized system. After this proceedure everything has been fine.
It goes like this:
1. Disconnenct two prong connector located under rubberized/plastic cowling on drivers side. The two prong connector is the smaller of the two located on the drivers side of the large air ventalation intake.
2. Start car on lower a/c unit to "lo" run engine for 5 minutes at 2k rpm.
3. Shut angine off.
4. Reconnect twp prong connector.
5. Restart engine.
6. Adjust a/c unit to "hi" run at 2k-3k for ten minutes. Add additional fluid as needed.
I noticed bubbles and radiator fluid percolating through the small vent on top of the overflow canister.
Hope this helps

urban area with a lot of traffic, you may be running hot naturally. Clean air as defined by racing term for moving air. As long as that needle doesn't go over the high mark, it should be within normal operating range. 50C is 122 degrees Farenheit, which is pretty much for the most of us in the US, a rarity. I wouldn't be too worried unless this is not the usual behavior you have witnessed in the past.
