Making the old phone in a 2001 S8 work

Ok, so I know you're going to tell me it's a dead system and that it won't work on today's networks. That's no the point, I'm assuming there has to be nerds out there like me that would love to retrofit some new tech into one of these, let's discuss that.

I forget even which network the phone ran on... CDMA or AMPS still? Either way, I believe it's pretty much been sunset'd here in the US. It might be possible to wire the mic-handset in... but in most states it's not legal anymore to hold a phone in your hand. I often look under that cover and think it should be good for something, but I don't think the phone hardware is revive-able.

There are kits which can connect a modern phone to an older car's radio. You might be able to adapt one of these to use the car's built-in mic. No modern phones have an antenna connection, but you could probably rig up a USB power connection as well.
