I thought someone with a VAGCOM on their laptop could do this, but don't quote me on that.

all of your keys, then it should take an hour or less to have the keys programed. That means a charge of one hour or less for the labor.

Which has the immobilizer. For the record, there are two dealers close to me and the other one (which always charges more for everything) quoted me $185 for the key and $85 for the programming.

This morning I stopped by the dealer that originally sold the car so I could get the service history. As I was leaving, I asked what they would charge: $118 to recode, $98 for the valet key and $230 for a new switchblade. They said it would take about 40 minutes. Yessss... But I do have the service history now!
