I am noticing a continual, but slow loss of coolant (Max to Min in about 2 weeks). There are no exterior signs of leakage...no drip spots on the driveway either.
Does this mean a bad head gasket or is someone stealing coolant while we sleep?
Any ideas or experience?

I had a similar problem, loosing coolant, not overheating. I took it to my shop and they did a block-check and found exhaust gas in the overflow tank. It took about a month before the head gasket finally gave way and caused mis-fire problems.
$1,700 later and it runs like a top.
I hope that is not your problem....

My guesses of where the coolant is going in order are:
1.) Cracked oil cooler pipe which may show on the belly pan or may be so slow it just evaporates.
2.) Head gasket... which should create gunk on the bottom of the oil filler cap.
One thing is for sure is that it is going somewhere and it's not a good thing.
BTDT with the oil cooler anyhoo:/

bad reservoir cap
pinhole leak in one of a number of hoses
cracked nipple on the reservoir
all of the afore-metnioned areas...
several definitive tests area available:
sniff the coolant reservoir for exhaust gases (hydrocarbons).
pressurize the cooant system and watch for leaks
analyze for coolant in the motor oil and exhaust.
you can also add fluorescent dye to your coolant and spot leaks with a strong black light. kits are available at your FLAPS.

mine was doing it for months.. i didn't know where the heck the coolant was going... it just wasn't to be found.
til one day, after an oil change, the indy FORGOT to put back my belly pan, and suddenly i had leakage all over the damm driveway!!! well there's the damm leak!!!! it was collecting in the belly pan the whole time and just evaporating or dispersed as i was driving around.
