Then why not an Y after the cats to begin with? A 2-in-1 muffler may not be easy, nor ideal perhaps.
If you want a single side exhaust I'd probably go for the X and two pipes after the center muffler. That's tried and tested, and I don't know how a 2-in-one would work out. I doubt if one vs. two stainless pipes after the center muffler would save that much (it's rather far back). A stainless sports exhaust will probably save weight over the OE exhaust.
If you want weight saving, there are lighter alternatives to stainless steel as well, though costly.
