Cant remove bolt for battery bracket!

OK this is almost embarrasing. I was having some electrical issues and my battery had basically died. I bought a new battery from Audi and figured why not just replace it myself - can't be that hard. I have a friend with VCDS and we had once recoded another buddies battery.
Well I got stuck today at the FIRST STEP. The bolt that holds down the battery bracket won't come out! I loosened it PLENTY and no matter what I do to try and lift it out it just won't come out. I tried to wedge it out with a screwdriver, then i used a big pair of pliers - but this thing doesn't want to come out.
When I watch the video here it looks so simple:

Im at a loss and apparently don't understand he very basics of how bolts work!
