I'm wondering if someone with more knowledge could enlighten me, are there any benefits to air suspension being in "Dynamic" mode other than the visual aspect of it being lower? And of all the settings which is best fuel wise, ride quality wise and what not. Thanks!

Besides just lower in Dynamic suspension is also stiffer. Both of those increase stability and improve handling. When a car is lower it has a bit better aerodynamic and saves some fuel. Ride quality is best in Comfort.

At 75MPH (120km/h) for 30 seconds in either automatic mode (full 25mm drop in non sport) or dynamic mode (last 5mm drop), it does its thing. But then it holds the lowered position until you either almost stop (22MPH/35km/h) or slow down a lot for a while (< 44MPH/70km/h for two minutes).
In plain English, you can get it to drop in the non Comfort Mode choices by a fairly brief run at 75 at some point, after which it holds on to it unless you get stuck in some pretty bad freeway traffic.

Unfortunately those final 5 mm are more of a theory in North America. But better stability and handling are not. In any corner or curve lower center of gravity and stiffer suspension helps. Even braking is better with lower center of gravity.

Is there any way to adjust (lower) the speed at which it lowers itself? 55mph limits around here so 75+ mph speeds tend to attract the wrong sort of attention.

...Over the many years and posts about the suspension. Documented with those specific speeds in the service/Audi training materials, owners manuals and such, so seems pretty "hard wired" in.
You can go down the first 20 of course just by going to Dynamic regardless of speed (assuming its a non-Sport), but then that stiffens ride too as mishar mentioned.

It was amazing when I tried the 80 to see it lowering itself, I could see the nose went lower, but my wife hit me so hard that woke me up... Cops are every where.
It ain't worth it. My sport option already lowered - I'm fine with it. The stiff ride is the one that cause me to go to smaller wheels - higher profile already.
