So I finally gathered up all the parts and I plan to install the unit this week.

Question: Does the unit function at all before you do the VAG programming?

I don't have a VAG com, and so I will have to take it to the dealer for that - I'm hoping it will work (like my XM unit did) even though the programming isn't quite right until I can get an appointment.

Any of you Audi-smart guys know?

Yes, it functions right away without the Vag, but you still should use it to clear codes & setup

I've had mine for six months now in my c6 A6 and never had to vag anything. Even did an MMI update and had no problem when it updated the AMI module.
