F1 wheels are that size purely for legacy reasons. They would love to go to low profile tires. Look at Formula E...

Anything below 40 series looks ghettoricey to me, I live in Seattle and there is a huge difference in road noise when you go down to 35.
I'm actually considering 255/45 18 for tires. The PO on this car put 225/45 on these 8x8.5 peelers and the speedo is off by 7mph.
Remember why we have tires filled with air, the purpose is to evenly distribute traction across varying surfaces, this becomes less effective as the sidewall and air volume is lowered, not to mention unsprung weight is increased since aluminum is heavier than rubber/air.
Yes, the sidewall does flex, but higher quality tires are designed to flex a correct amount and in the correct conditions to account for the road conditions.
