How do you keep mice out of a car while stored? Preferably something that you know from experience.

I've been using one of those zip up bags for a car in storage and it seems to work well. You drive the car onto the bottom and zip the bag around the car so it is completely inside a zippered bag. They are not cheap I think the one I have was $125 or so.

I leave a mouse trap (sticky trap) inside the bag and check it every few weeks to verify nothing has gotten inside. I did have one case where the little bastards chewed through the bag and got insde but I found them before any damage was done due the the stick trap being disturbed.
