I can hear the fuel pump whine on one of the SBs when the car is idling...normal? bad?

Might not completely apply. The best I could come up with. Not an Audi board, but some things are just the same on most cars.

http://www.automotiveforums.com/vbulletin/t758440.html</a

Someone once told me that brand new pumps have been known to scream and pumps on their last legs have known to be silent. If its noisy, but you can't hear it from the inside of the car that "normal".

For some cars, it's normal.
For one of my 4kqs, it always made a noise. But after 3 years, it started getting worse, and finally it died.
So, some noise *may* be ok, if it's always done it. But if all of a sudden the noise gets worse, then probably a problem.
As the cars are new to you, that makes it hard to tell what's going on..

As mentioned, its a very common condition that could last months or days. However, except for running ~3 seconds when the ignition is initially turned to "accessory", FP noise shouldn't be noticeable. If you can hear it, it might mean the pump itself is bad and will (eventually) fail or that a blockage in the fuel line is starving the pump. Replace the fuel filter (cheap!) and see if the problem goes away. If not, begin making plans for a FP replacement in the relatively near future. It probably will make a bigger fuss in the days before it goes, so keep your ear tuned to changes. Also, it's probably a good time to check your fuel lines. I had to do a replacement when I did the pump.

And to add, if your pump is not getting the correct voltage, it will also be noisy. And, burn up earlier than it should. I always relay the FP's on an older german car as soon as I get it.
As for the blockage, the other problem are in 4000's/coupes is the tank. There is a metal screen inside the tank, which can (and does) rust and get plugged over time. I've dealt with this on four different cars.
