Default I keep track of each gas fill up, all maintenance, etc in a little book in the glovebox.

Write down the mileage, gallons, price of each fill up. Write when I put summer/winter tires on, oil changes, and any little bit of maintenance. Helps you remember when/where you do things. You're right though...it would be cool to have it on an Excel spread sheet or something, but it's so handy to just keep the book in the car and write it in. I don't have the discipline to then record the book entries into Excel.

Default I keep all my records in an Excel spreadsheet

I don't tally fillups normally, but everything else gets put on the sheet. Parts and costs, installation with mileage, etc.

I don't keep any records, especially for the urq.

I'm sure I'd be pissed to find out what I've spent on it.. :-)

Default Gas receipts get put into a spreadsheet, other receipts into a file....

I guess I'm a bit **** about the receipt thing - I have almost every gas receipt with mileage and other data on a spreadsheet to observe trends (seasonality - probably due to summer/winter tire switches, cold/warm weather and winter gas additives). I was cheesed off when the old odometer on the 5ktq went berzerk and started reading 10x and the mileage qwent off the clock. You know you're getting a bit obsessive when you take photocopies of receipts so that purchases that bridge 2 or more cars will be represented in each file. Like Katman, though, I have not tallied up my car expenses - they just go into the file for me. Ignorance is bliss.
Cheers!
