spark plugs

Hey all,
So, after thinking all sorts of things about my running issues. I realized I'd never done the plugs! So I did. And it runs very different and it definately getting above 20MPG now instead of below (still a guess since no matter what I do the odometer hates me).
Anyway, the plugs don't take the nub at the top? Are they supposed to be put in with just the threaded top showing? I was suprised to see this, had never before. This is normaly though?
Also, any suggestions on removing plugs from heads that are stuck? The heads are aluminum and some plugs turned hard, full of aluminum dust. But the middle plug did not budge at all. I don't want to force it... any suggestions? Like heating/cooling cycles. Anything? I'd really like all the plugs done.
The plugs I took out were Autolites (stupid ford products) and gapped at .035. These bosch platinums gapped to .028 seem much better.
Thanks, oh, right, 1984 4000S Quattro.
