I'm sure its the cat based on the symptoms you describe. But it would be an expensive mistake if I'm wrong.

Seems like they are stripped from the cars at the yard pretty quick. Must be one of the first things taken.
The knocking-rattling sound is bugging me as I'm praying its not coming from the trany/differntial. It seems to shift fine but its hard to tell with the way it's running now.

I remember it was important to lube the "O" rings when reinstalling. It helps to seat the rings for a nice snug fit upon insertion. I think that I used white lithium grease out of a spray can. Never gave me any trouble afterwards.

Do you think this could be the cause of my problem?
I got a pretty good look at my cat tonight and it looks like it is pretty new so now I'm becoming skeptical that the cat is the source of my problems. Maybe my injectors didn't seat well? That couldn't be good.
