OK I have changed the coolant temp sensor today but this has not solved the issue. Could I be looking at a possible ECU error? If so, where is this located. Failing that, what is the next cheap fix?

The only other cheap fix is to insure that the grounds to the head are good. I'll do some more research and keep you posted.

Espy, many thanks for your assistance. If it helps, the condition feels almost like fuel starvation but as the vehicle never cuts out, and will happily drive the motorway at 80 MPH with no problems, I have discounted this. My only other thoughts were ignition related, perhaps Ignition module (if there is one), hall sender/distributor, or ECU. None of these are cheap fixes, hence me wondering if there was a diagnostic socket on the vehicle anywhere.
