Well today when driving I noticed my rpms fluctuating significantly at about 75 miles an hour in 5th gear. How much longer is my clutch going to last?

Usually it slips in the lower gears, at lower speeds & rpms?
See if you can actually make the clutch slip?
If indeed its slipping, it only a matter of time before it goes completly. Depends on how you drive, and how often......

but the higher the gear, the less it slipped. so slipping in 5th gear only.....could that be anything to do with the mechanical components of the gear itself? or maybe something with the fuel delivery? these may be completely irrelevant, but going off what mik said, clutches usually slip in lower gears at lower speeds and rpms, so an "only 5th gear" clutch problem may not be a clutch problem at all. =)
