If not, then do the obvious and restore you system as it was designed. If you are opening the system when hot then it is supposed to boil over - the sudden pressure drop causes the water to boil at a lower temperature. This will also happen if you have a leak, which can be at any point (hose, clamp, heater, thermo housing, water pump....) leave no stone unturned when searching for the leak. The MOST insidious thing to leak (after the damn heater core) is the overflow tank. This can develop invisible cracks that will spray water in a random direction and cause you to assume that the leak is somewhere else ASK ME HOW I KNOW. Bottom line is you need to at least get the thermo back in and find the leak. Would not hurt to have the heater core back in the loop, either. Ask Miktip about getting to that bugger.
GOOD LUCK!

Even though you may not use heat, it still acts to cool the engine.
Check to make sure the fan is actually working.
Make sure the fluid level is where it should be always. A low coolant level will make it boil sooner, less cooling capacity/faster heat/faster boil/faster coolant loss/etc..
Make sure your cap is fresh, the system needs to maintain pressure to prevent boilover.
Check your oil for white goo.
NEVER add cold water to a hot engine!
