I have just recently replaced the coolant in my Audi 90 with the "Red Stuff" and recently I have been hearing a lot of talk about it eating gaskets up. Is this true? Anyway to look into it?

Do a search for coolant - much past discussion here. If you use Audi coolant, (red or blue) and
have done a full flush before changing, I don't think you'll have a problem. Issues with gaskets could be because they have deteriorated so much and changing the coolant type (red is organic acid rather than glycol) causes a problem.
If in doubt, just continue to use Audi blue coolant.
But do not rely on coolant color alone. As posted previously, colors are not unique to a certain type or region (Japan, Europe, US, etc). These days, it is best to stick with one type and one brand of coolant - no mixing of unknowns.
