I have a friend ( who coincidentally was integrally involved in the birth of audiworld) who drove an a5 and he had no issues as long as no one was sitting behind him.

Just bot a 2012 S5. I am 6'4. I have the seat all the way and all the way down and it works fine. I came out of an A8--2011. s5 doesn't have that kind of room for sure--but it is adequate--and comfortable. I might like it lowered by an inch but no more than that
I do sacrifice being able to put the driver side rear seat down for increased trunk-even with the head rests removed---no big deal since that's the singleton seat (whereas the rear passenger side and center console is one unit (thus 60-70% of the rear seat) andt lowering those does not interfere with the driver's seat.
One note--have the seat that far back and low--I find that the side of the seat rubs against the console and "squeaks". Solution is apparently to find some adhesive cloth tape and stick that to the console--supposedly eliminate the problem Now I just have a towel stuffed between them--the squeak is annoying
