Is it possible to special order without sunroof? I'd like a S5 but not with a sunroof. When I ordered my A4 years ago, I was able to order without.

I was in your camp of not wanting a sunroof. But I looked at my roof this morning as I opened the door, and I thought that black panel of glass looks good.
It is true that the sunroof has limited usefulness. It only tilts up in the rear. My son's Toyota Celica has a similar radical roof line, AND a functioning sun roof. The Toyota sun roof does not slide into the headliner, but rather extends over the roof line at upward angle.
Maybe the Germans thought the Toyota style sun roof would make too much noise on the Autobahn.

1. How the roof would open
2. It would change the lines of the car and Audi didn't want that.
3. Said it would like a Hyndi Toubran....lol

I always bought the cars with the sunroof option. But with the S5, I am not sure if I like it all because it only tilts rather than slides open. On the other hand, I understand why it can't; there is no room for it. I still like it because it gives a nice open feel when the shade is rolled in.
