Ordering confusion

I tried to search the forums for this but just ended up getting a lot of unrelated threads so I'm just going to ask.
How does ordering work? Once you agree on a price with a dealer, how do you guarantee he will provide you that price when the car comes? Is there an order sheet or agreement you sign beforehand, or do you just plop 1000$ in front of him and hope he honors the prices?
Just wondering because I'm working with 2 dealers for a 2011 A5, and one seems very straight forward and honest, while the other keeps mis-quoting me prices. He keeps saying that he will honor the 250 over invoice price he has promised me, but when it comes time to email me a quote, he's messed it up twice--first giving me a 2010 price, then giving me a price that was 1000 over invoice! I gave him the corrected breakdown and he sent me some incoherent email claiming the price was 37000 for the base (which it is, but that's MSRP), and that my price was incorrect (which it was not)...
I would go to the (seemingly) more reliable dealer in a heartbeat, but the problem is he's asking for 150$ more... and is about 300 miles further from me than the "confused" dealer... :/
Any experiences/tips you guys could share about ordering would be appreciated...
PS If they do a substantial refresh next year, I'm gonna be pissed!

I received the same form as I would get if I had purchased the S5 that day, in which he wrote down the approximate price, gas guzzler tax, destination fee, and the $1000 deposit. He also provided me with the updated order guide with the MSRP and Invoice listed, and the updated price (after the MSRP and Prestige Package price increase for the 2011 MY).
