Our throttle is electronic and learns the driver as far as I know, but how do you "reteach" it...

Procedure in older Audis was to open the driver's door, turn the ignition on (but not the engine)...
... then leave the door open and the ignition on for longer than five-ish minutes.

ECU polls your driving behavior and adapts throttle response and other factors to your...
... behavior. It learns you. Resetting this gives you the stock calibration. Sometimes, this makes the car feel noticeably different.

You can "clear the memory" by doing a throttle body adaptation with a VAG-COM.
On the B6, there was supposedly a manual way of doing this, as described by Europa below. Not sure if this holds true on the B8.
