Should I change oil at 10,000 for the S5 or wait for 15,000 ?

OP, oil and filter service frequency will depend on driving style and time. If a lot of city/stop-n-go driving, I would go 3k-5k with synthetic. If a lot of interstate/steady-state driving, 10k would most likely be okay. It is not just the oil but the effectiveness of the filter at 7, 10 or 15k miles.
For me, performing routine maintenance at 5k or 7k is cheap insurance against future issues. I also subscribe to the old school program of changing my brake fluid, coolant, transmission and differential fluids.
If leasing the car with no intention of keeping it beyond the term, go every 15k and save your money.

Ok, you guys have convinced me to change oil at 10,000 miles.
What oil do you use - should I just buy Mobil 1, Castrol Synthetic,
or use Audi's oil for my S5?

If you haven't already done so, look at the prepaid maintenance plan for Audis. It think it is $850 for an S5 and it includes all scheduled maintenance up to 50k unlimited time. You can do this up until the 15k service, although it is the same price after that. If you a have an honest reliable dealer, do the intermediate oil/filter changes at 10k, 20k, 30k, 40k, 50k. The engine may last longer, and if you sell it, you have the receipts for the additional services.
