Frameless doors are part of what makes the Sportback a "coupe", by definition, and contribute to it's swoopy roofline. It's a design cue that pays homage to early coupes (pre-1950s coach built) and adheres to traditional coupe styling.

Because that's not the correct answer ("cheaper"). It's actually more expensive to design and manufacture a vehicle with frameless doors to the level (tolerances) of similar sedans -- i.e., S5 vs S4. The material savings during manufacture are nothing compared with the inherent costs to overcome design and production costs.
