I don't know about the B6 and B7 but the B8 has an under body tray that requires removal if you wanted to access the oil pan.
I just take it to the dealer and they use whatever they use. It meets Audi's requirements so it's fine.
That's what I called the belly pan. It's always just been about ten quarter-turn fasteners to remove it. One minute max. Oil needs to meet the VW 502.00 spec (Mobil 1 0W-40 does that). I realize that not everyone likes to (or has a place to) get under cars to do work. But that's not where I was going - I'm truly just confirming that there is not some secret new thing I need to know to change oil on my (soon to arrive ) S5. I don't mind getting dirty hands to bond with my car.

Nope, nothing secret or new about changing the oil.
I guess I'm weird since I like to remove the undertray and clean it at each oil change. If a leak develops, I'll know. FWIW my B8.5 is easier than our Q7 and WAY easier than the two Mk1 TTs. The easiest of all though was the Cayman S I had. No pans to remove on that one. ( just be careful not to spill oil in the trunk while refilling :-)

Yes, my 911s were amazingly easy. Dealer wanted $450 for an oil change 😂
My B9 S5 does NOT have a dip stick, NOR does it have a dip stick hole. So if yours does please tell me why mine doesn't and how I can use an oil extractor using that non-exsistent hole.
Audi doesn't include an actual dipstick anymore, you have to use the MMI to look at the oil level. Hopefully ECS will sell a dipstick for it soon. But there is a dipstick tube by the oil filter, at least I'm pretty sure it's that based on previous recent VW/Audi's.
