What the type of front brakes mechanism installed? What reason to use not original spare parts?
Allroad could be equipped two different type of front brake caliper.
First type - HP-2. It’s Lucas brake system and every brake caliper has a 4 brake’s pads.
Second type - FN3. It’s ATE brake system and every brake caliper has a 2 brake’s pads.
If your original brakes not enough you can think about rise diameter of disk and improve efficiency.
I can explain cheapest way for improve brake second type FN3. If your car had a first type of brakes - solution will be so expensive.

My front calipers look exactly like the ones on my B5 S4. Can anyone tell me which setup that is, HP-2 or FN3?

On your B5 S4 installed calipers like HP-2 (sorry, I checked). You can easy identify by one or two brake pad(s) for every side. Please see attachments.
But, never the less! For improvement of my front brakes I installed brake carriers (2 pcs) and brake disks (2 pcs) from 8E S4. Disks from S4 have got expanded diameter 345mm. This size has more effectiveness than 321mm of original Allroad size.
I kept original brake caliper housings without any modification (few grinding action before installation) and kept original brake pads.
List for request:
1K0 615 125B (2 pcs) - brake carrier
8E0 615 301T (2 pcs) - brake disk
8E0 615 311C (2 pcs) - dust cover
Few grinding manipulations with original brake caliper housings necessary for keep gap between disks and housings in 3 mm. These action not so difficult and can save money for exclude to buy new S4’s brake caliper housings.
P.S. Wow! I can bite off nearly a steering wheel after running-in of new components.
P.S. If it is interesting for somebody, I will translate my photo report and show here.
