Yes, that is exactly what I have done at this point except I am too low for level 1
so I had to put slots in the bolt holes for the ride height sensors so that I can physically adjust them to get the right level 1 range.
The only problem is that when I put a large load in the car it can't auto level and I get the suspension light. Of course I don't mind not being able to turn off ESP with 5+ people in the car, but a better solution would be welcome.

So, what you do is put the car on the level that you want to permanently have the electronics "read".
Get under the car, disco a sensor, and read it with a multimeter. Then, get a very high tolerance, very stable resistor, disco the sensor, and then wire the resistor in place of the original sensor.
That said, you know what would be uber, uber hot? If this were tied into the headlights, you could always have that same potentiometer-type connection IN THE CABIN to manually dial down your headlights if you have levelling issues with a load.
Just saying. Any halfway-decent EE could figure this out while sleeping.

I have tried this exact thing, though in a different way
I took the linkages off from the sensors, used VAG-COM measuring blocks to rotate them to exactly 0.0mm deflection (default level 2 value) and then fused them in place with epoxy. This essentially set a specific resistance value that stayed constant regardless of actual suspension height.
The problem is that the headlight leveling did not like it. It results in the animated center cluster warning light for headlight leveling. I have not figured out exactly why yet, but I do know that the headlights are tightly integrated with the allroad level control system.

If I did this mod - as opposed to just re extending my warranty - I wouldn't be below...
stock level one. So maybe I wouldn't have to go to the lengths you went to. The self leveling's another thing. I don't know what to do about that. Do you end up blinding oncomming traffic at night?
