I need to flush my system and put new coolant. Should I go with Red or stick to Blue?

I think I smell a bit of the ol' bovine excrement spreading...
Glycols break down to acids? Really? How does that happen?
As a chemist, I have some idea about how chemistry works. That claim is one I've never heard before, and one that doesn't make any sense from a science standpoint. I've heard of the dissimilar metals electrolysis thing between iron block and aluminum head - which makes sense. But ethylene glycol turning into acid? I'm a little dubious.
