My mechanic has a new T40E turbo that I would like to put on my car as well as order the the piping kit from 034 and do fmic. I also would like to do the headgasket & head work.
Do you think this turbo should be good enough until I get gt3071 or should I be fine with this? Is there anything else I should consider injectors, rods, bearings?

Don't wait until your turbo fails.
If you want more power, and are willing to have the work done to make it reliable, then go whole-hog. I agree that 3071 is the better choice.
Yes, injectors, exhaust manifold will be necessary to take advantage of that bigger turbo, or you will be suffering from severe lag. You will also want to relay, and probably upgrade your fuel pump.
You are thinking the right way by inquiring about rods, bearings, etc. While many people run massive power with stock internals, the potential carnage that can ensue from such a setup is not worth it. Better to build the strongest foundation you can, and then you needn't worry. All of this depends, of course, upon your budget. Can you afford top quality pistons, rods, and bearings? If so, then sweet, do it. Maybe a 7A camshaft?
Are your brakes stock? If so, I wouldn't even think about doing this stuff until you upgrade your stoppers.
