Starting to install stuff, couple questions...

1) In RCA wires there is always a middle wire in between the two L & R plugs. What is that for? Are you supposed to ground the head unit and amp together?
2) I got a set of 5.25 infinity perfects components. Their RMS handling power is 100W. I got a sony amp that pushes 4x75W or bridge as 2x200W both RMS. I know the sony amp is probably over rated, so should I just run two channel and push them at 75W each (realistically probably only putting out 60W) or should I bridge it at 200W each (realistically putting out 150W)? I'm thinking its better to overdrive them than underdrive them. Agree?
Time to get back to making the adapter. Failure is not an option

Giving them more power would be better IMO. They are a very nice comp set and can take more than their rated 100w rms, plus your amp won't be giving them 150-200 watts all the time, just when you have it on full tilt.
Just keep the gains low to minimize distortion (well that kinda also depends on the HU, but anyway...) and don't be crazy with the volume.
And it is not "better" to overpower rather than underpower it is all in how you play the speaks. If you want them at a certain volume and the speaker can't play that high without more power, then yes, it would be better. But if you never get it that loud, lower power is just as good.

More power would be better than too little power. With too much power, you won't chance clipping... just be sure to keep the gain on the amp at a reasonable level.
The small wire between the RCAs is most likely a "lead turn-on wire". In other words, it sends the signal from your head unit to tell your amp to turn on when the radio turns on. It's usually hooked up to a blue wire coming from your HU, but if you're hooking up to a factory HU, then check out the pin out diagram that somebody posted around here. There's a pin for a "trigger source" or "turn on" or whatever you want to call it... just do a search for the picture.
