I have a 2017 A5 SportCoupe 56K miles and in the process of replacing my brakes. Should I replace the rotors or have them turned to specification level? Doing the job myself and dont intend to keep the car, waiting for the 2022s.

I would just check the rotors for spec thickness and if they are ok just leave them. I would expect at 56K you are fine and could just drop a set of pads on. That has been my personal experience on previous cars A6, A8, A8L,.
