Default Q5e engine break in

So pure EV miles count towards the 600 mile break in period for the engine?

Nope, the break in period is really for the ICE (gas engine) and transmission and in total is 1,000 miles. No more than 2/3 acceleration for the first 600 miles, then gradually increasing (avoiding full) until 1,000 (page 83 in my manual). Electric motors need very little break in period, but since the transmission is involved, still holds true.

If your in a rush to break in, then stick to sport mode to force the gas engine to run more often (you'll be driving around more like a high performance conventional hybrid). But you'll miss out on the full electric drive quite and gas savings.

Or you could just take a few really long car trips (like I did) and stick to EV mode for the local stuff (normal mode).

Or just wait a long time....
