I went to the myAudi page to download the maps and read this Note:
Can anyone explain what this means?
Do we get unlimited updates to maps for as long as we own the car even if we don't renew Audi Connect?
The Map Update includes the first five updates to the version of the map installed at the factory.

No, only the first 5, and independent of whether you subscribe to Audi Connect.

I thought the map update works only if you had a valid Audi Connect subscription.
Infact if you don't have a valid Audi Connect sub, how do you even get the map update? In the UK, the map update is published within the Audi Connect section of my.audi.com
My car came with 3 years of Audi Connect, with a map update every 6 months, I should get the 5 updates from the factory version.

I don't think so. Audi Connect adds support for over-the-air updates because it uses the built-in data connection, but you can always just download the map update and install it manually. One of the posts in this thread confirms that.

Maybe I was just assuming that since I currently download the updates from the Audi Connect section of the my.audi portal, I wouldn't have access to the Audi Connect pages once my Audi Connect sub expires. Where would I get the map update from? So maybe the Audi Connect pages stay visible to you even without Audi Connect being available as a Service in the car.

[The update] will have to be done at the dealership so the cost will vary from dealer to dealer ... it would cost $400 - $500 for the dealer to do a map update

I would ask at the dealership before you take that at face value. My 2007 Lexus, which used a DVD that couldn't be replaced DIY, I think cost about $150 for the DVD + $100 for labor, so $250 as a benchmark. I wouldn't be surprised if it's gotten more expensive over time.
