I plan on switching my 21" S-line wheels for a 20x10 et40 with 295/45r20 set as soon as my current tires wear out. I kinda like the smaller wheel, meaty tire look. The diameter is about 1.32" more than the current setup so we'll have to see if rubbing will be a issue. Some say it will some say it wont. Only way to tell for sure is to give it a try. But to answer your question, 295/40r20 will fit fine, lots of people have done it with no problems. On a 20x10 wheel the offset is the most important thing, anything from 35 to 45 should fit nicely. 295 is a pretty wide tire for the stock 20x9 wheel though.

My 20x9 ET 30 setup with 275 Conti DWS rubs a little bit at full steering lock. These are replacements for 21" peelers as well, and I also have air suspension. You might compare the rolling diameter for mine with your planned setup. If you run tires as big as mine, you will rub some... especially on lower suspension settings. Bigger tires will likely rub a lot. For reference, Tire Rack shows my Conti's at 29.7" overall diameter and 699 revs per mile.

I'm running 275/45ZR-20 Continental ExtremeContact DWS XL. They rub just slightly against the air vent in the wheel well just under the headlights. Its not enough to cause any damage and it only happens in dynamic suspension mode at full steering lock. But it would be a real problem if your setup was any bigger, or had an ET that pushed the them out any further.
