Anyone get a remote starter for their Q7? Would it be difficult with the "smart" key?

You would be risking wayy to much, but even touching the electrical system. What if something goes wrong with the MMI? The warranty will be void, and then you're screwed.
The easier way, is if you have advanced key. Turn on the car without the key, and then come out of the car, and lock it. It will allow you to lock it, even though the car is on.

one other thing is that the Q7's security system with immobilizer would be really hard to fool. Since these cars are very advanced, it would be very hard.

This is one thing I miss from my old car. I had a remote starter installed and could start it from 100s feet away, through buildings, etc. I have a detached garage, so even though I have the smart key, I have to go outside and walk to the garage and start the car, then come back in. I used to just push a button from the house.
If I had longer limbs I suppose I could put my foot on the brake and finger on the Start button without leaving the house. Maybe Mr. Goldberg could help me with a solution to this vexation.
