Average MPG Readout Issue?

The average MPG readout in my 2011 Q7 appears to be inaccurate? It jumps around from 10-30 MPG, when it should stay fairly constant.
For instance, when I start the vehicle and drive on city streets, it will stay around 13-15, then jump to 20+ when I hit the interstate. Today, after I refueled, it jumped to 33 MPG on my way home.
I have had many vehicles that give average MPG, and not one acted like this. For example, my 2008 Corvette now reads 21.8 MPG (mix highway/city), and it will only vary from that 1-2 MPG unless I take a trip on the interstate.
