Britax baby seat wont fit in back seat - cant remove headrest.
Coming from an Allroad, i had to remove the rear headrest to let my Britax babyseat properly fit in the back seat. With the new Q7 i have to jam the top of the Britax up against the headrest, and it's still not in the correct angle for real safety....
Why would they make it so the headrests are not removable?

As others have said, it would appear that the idea of folding down the headrest in an attempt to make it easier to lay the seat down superceded the practicality of having a carseat in the 2nd row.
There is a <a href="https://www.audiworld.com/tech/int62.shtml">tech arcticle</a> detailing how to remove the headrest. I followed this and took mine out completely. When my youngest gets out of the seat, I will put it back in.

Re: if facing forward remove the seat base and it will fit very well
You're talking about the pivoting britax base -- is that meant to be removed, also, will it sit flat on the seat?

I'll post a couple of pics later tonight so you can see how they fit in our car.
Once you turn the seat to face forward, the base becomes just a waste of space (the seating position is too high for a toddler with the base on, i.m.o.). The base comes off relatively easy. With my lack of patience I think I ended up cutting the plastic bolts that attach it to the seat's body.
By the way, without the base the seat fits a lot better in an airline seat and it still works well with those travel attachments (we use this one: http://www.gogobabyz.com/_media/images/gogkids_side_new_july.jpg).
