Default Winter wheel and tire size question

I'm researching for a set of wheels and tires for winter driving. We live in Sacramento and will be driving up to Tahoe area about every other weekend during the winter months so most of the driving will actually be on dry (or wet) roads. I am considering getting 18" wheels but was wondering if I should get 255/55 (stock size) or 235/60 width tires (considering Pirelli Scorpion ice and snow). Again since most of my driving will be on dry roads, are the 235s going to handle as well? If I stay with 255s, how will they handle in snow and ice conditions?

Also, I've checked with tire rack and there are only a few selection of 18" wheels and most of them are 18x8. Can I mount 255s on wheels this size?

Does anyone know the width of the Audi 18" wheel that they sell for their winter package? I believe they recommend 235/60 tires.
Any comment will help. Thanks.
