If you have rolled the fenders and trimmed the valance to clear, IME the limit is 235. In fact 235/40-17s on 8" (might be ET 35 or 38) wheels are a pretty good track combination. Any wider will rub on the tie rod up front or all over on the outside in the rear.

Asthetics aside, 225 is about the perfect amount of tire for a 7.5" rim. Most shops would not even mount a 215 on a 10" rim.
"plenty of tire" you say, for what is the question. Daily driver, boulevarding, tracking, rallying...My car easily overpowers the stock 205 and I'm pretty sure 215 wouldn't be much better. I have 2" clearance from my tire to the top of my fender. I suspect my springs may be a bit tired as the bumps and speeds I'm running to cause that to bottom is a bit low by my book.

Its hard to give proper advice without seeing what you are dealing with. Without pictures you will not get any other advice here.
However 225 is alot of meat for a 7.5 . im running a 215/40/16 on my 10" wide wheels. Thats a different story but you can easily get away with a 205 and still have plenty of tire.

As I posted non rolled fenders. Sounds like to run the tire not rubbing I'll have to pick up some offset. I hear you on the tire rod end. In theory the 7.5 ET35, picks up 4mm on the inside vs the 7 ET45 but I pick up 15mm or so on the outside hence the problem in the rear. The 225 45 17 is only .14 inches taller than 205 60 15 but I'm lucky if I have 5-10mm clearance @ the tie rod. Maybe a ET45 with 5mm spacers.
Usually the first spot that rubs is on the rear valance at the top mounting screw, especially if the circumference is any larger than stock. The cars with rolled fenders have that mounting screw removed and the valance cut away there.
