what do you guys do when you have left your car out in the cold for a long time? do you turn on your engines and warm up the car then drive, or do you drive right away, but keeping it at low speed/rpm?

I haven't checked, but I'm pretty certain that the owner's manual says NOT to let the car warm at idle. I am certain, however, that this is bad practice for BMWs and some other makes, as oil pumps are driven by RPMs and hence, so is oil pressure. That being said, after my car is left in the cold, I drive off immediately but keep the RPMs below 2500-ish.
BTW just because your coolant needle is in the middle does NOT mean your car is properly warmed up! A good rule of thumb is about 15 minutes.

my problems with the rpms hanging? if the choke were to come back on, that would be causing my rpms to run high at idle, correct? how would that affect the car at speed? is there any way to disable the auto choke to test that?

that went away with carbs. The car goes into a warm-up cycle, where it will bump the idle up slightly, change the timming, and make the engine run rich until the ecu gets a message from a temp sensor stating the the engine has reached a specified temperature. Your problem may be that that sensor my not be working or something else.
