In a curve with ESP off steer in one direction and then very hard in the other after releasing off WOT the car will start to rotate and you counter steer as needed. You have to react fast or it's ditch time. Most people don't pull this off well. Several ended up in the gravel trap or couldn't get the car to rotate enough.

So, you don't get it easy to oversteer with power.
You can solve it by lifting your gas while cornering, steer a bit extra and then full on the gas.
Or... Drive the corner at his limit and then lift your gas.
